Cowboy Chili

I've been trying a few new recipes of late. I'm trying to expand my cooking repertoire while making things that don't involve a bunch of expensive ingredients. My favorite new recipe is one for some really amazing chili. It's quick to make and 90% of the ingredients are pantry food so can be kept on hand till a good chili days rolls around. Chili with a kick plus a sweet cornbread baked on top, quick, easy and delish!

Cowboy Chili
(serves 6)

Ingredients:
2 tbs. vegetable oil
2 lbs. ground venison (or any ground meat)
1 cup diced onions
1 medium red or green bell pepper (chopped)
16oz. can diced tomatoes
16oz. can tomato juice
16oz can port and beans
16oz can kidney beans
1-1/2 tsp salt
1 tbs garlic powder
1 tbs chili powder
1 tbs crushed red pepper
1 c grated cheddar cheese
2 c corn meal mix
15oz can cream corn
1/2 cup milk (add more milk if batter is too thick)
1/2 c sugar

Brown ground meat in oil.

Place in large pot. Add onion, tomatoes, tomato juice, pork and beans, kidney beans, salt, garlic, chili powder and red pepper. Cook on medium heat for about 30 minutes, stirring occasionally.

In a separate bowl combine cornmeal, cream corn, milk and sugar. Pour chili in deep 9x13-inch baking dish. Sprinkle with cheese. Pour cornmeal mixture evenly over top of chili.

Bake in oven at 400 degrees for 35 minutes, or until cornbread on top is golden brown.

ahem, while port and beans would probably make pretty darn good chili, er um maybe try porK and beans instead.
